A Day Without Coffee Is…
Just kidding, I have no idea.
If necessity is the mother of invention, then my hectic, bleary-eyed mornings invented Protein Cashew Coffee Drink with Instant Espresso.
On a day off recently from my real life job, I lazily sipped my morning coffee while thinking how much I loved these slow mornings. I wake up early but I don’t have to be anywhere STAT! No patients to see, no night shift to relieve. Just me, my joe and a crossword.
As the hour ticked by and I finished my second cup, I headed to the kitchen contemplating what I was going to have for breakfast. Again, enjoying the slow morning and wondering how my life could be easier on ‘workdays’.
As I looked down at my empty cup, the idea hit me. A coffee drink that was somewhat filling so that I could get to work on time and skip an early breakfast. The early breakfast part was always an issue. I don’t get hungry until I’m up at least 1-2 hours. If I don’t eat anything, I’ll be hangry by the time I’m suppose to see patients. Not a good plan so I forced myself to eat before work, before I’m hungry so that I don’t scare any poor soul who needs more nurturing than a visit from a grumpy goose.
I pictured some kind of smoothie-latte-drink thingy that I could make fast. Something that I could make in the morning without having to make or prep the night before, because you know, squirrels!
I opened the fridge and I saw food that needs to be tossed almond milk and yogurt. A good start I thought.
It has to have coffee in it. I opened the coffee & tea cabinet and saw a small jar of my hubbys instant espresso, hmm… maybe.
Then I remembered a cashew coffee recipe I read a while ago. I have cashews.
sIt all went in the Vitamix with a handful of ice cubes.
I also timed myself, sort of, actually just guessed at how long this will take me in the morning. Under 2 MINUTES!!
I took a sip and I knew. The cashews gave the coffee a latte-like feel, creamy and with a slight nutty taste, like foo foo coffee. The protein powder and yogurt gave it some body. The ice made it instantly cold. I
This was IT. I took it to hubster and said ‘try this’. He took one sip, then another, then… he tried to steal it:) Yup, I knew. Yes, you can make a coffee smoothie, apparently. That’s what I’m calling it, and easy peasy cashew coffee smoothie. This one hearty enough to stave off the hungry vibes for a few hours, a perfect on-the-go cure for busy people. Make a hefty batch of this and treat yourself. At least until you learn how to slow down and not have such hectic mornings.

Protein Cashew Coffee Drink With Instant Espresso
Cashew Coffee Protein Drink With Instant Espresso. A quick morning pick-me-up/snack for busy people on the go. Nutty cashews give this morning bevy a coffee house like taste and creamy texture and instant espresso makes this super fast to whip up. Dive in!
Ingredients
- 1 cup unsweetened almond milk
- 1/4 cup cashews
- 1 Tbs instant espresso
- 1 heaping Tbs of protein powder
- 1/4 cup yogurt, plain or vanilla
- real maple syrup to taste
- handful of ice
- a pinch of cinnamon, optional
Instructions
- In a blender, add first 3 ingredients and blend very well. A high speed blender works well but is not necessary.
- Add next 4 ingredients, blend until ice is fully incorporated.
- Pour in a to-go mug or glass, sprinkle with a pinch of cinnamon, just because.
- Take on the day!
Notes
This is a highly adaptable recipe. You can use a banana instead of yogurt, soy milk instead of almond etc. It's OK to play with your food.
