Thai Pumpkin Soup

This Thai soup is one of the easiest soups I have ever made and full of so much flavor.  It’s made easy by minced lemongrass from a tube and ginger from a jar.  You can really take a short cut by using a rotisserie chicken from the market.  EASY!!!

Thai Soup with Pumpkin

Flavored with the usual Thai ingredients of lemongrass, ginger, fish sauce and lime juice but with an Autumn bonus, pumpkin!  In fact this is basically a Tom Kha Gai soup with pumpkin.  I have 15 pumpkins from my one vine this year and I need to use them.

Speaking of pumpkins, have you ever roasted one?  It’s easy and pumpkin is actually really good for you, high in beta carotene.

Thai Pumpkin Soup

Yield: 6 Bowls
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

A Thai classic inspired the pumpkin version of Tom Kha Gai.

Ingredients

  • 4 cups chicken broth 
  • 2 Tbs ginger, minced
  • 2 Tbs lemongrass, bottom part, tough outer leaves removed, chopped
  • 2 Tbs fish sauce
  • 1/4 cup fresh lime juice
  • 2 cups pumpkin puree
  • 1 can coconut milk
  • 1.5 lbs shredded, cooked chicken
  • 1 bell pepper diced
  • 2 scallions, sliced

Garnish

  • pepitos & chili oil

Instructions

  1. Bring chicken broth to a boil, add next 6 ingredients.
  2. Simmer for 5 minutes, add remaining ingredients, simmer 5 more minutes, stirring occasionally. Garnish and serve.

Kudos for the recipe to get people to dip their toe in cooking some Thai style food, it does sound delcious, but saying 'Tom Kha Gai' means 'Soup Ginger Chicken, is like saying Yum Cha means dumplings. Well, maybe not that bad, but galangal does have a very different taste to ginger, and literally puts the kha taste in tom kha.

Hi Adrian, thanks for the feedback! When I first made this, I couldn't find galangal where I lived so I used ginger. Since then I can find it at an Asian store that opened up in my area. I need to re-make this with the galangal, especially since it seems like it's easier to find. Thanks for the suggestions.
