Cooking For Dad

Simple Shepherds Pie

Shepherds Pie is a popular recipe with infinite variations. It's basically a protein, usually meat, mixed with vegetables, herbs and seasonings, then topped with mashed potatoes and baked in the oven.
Ingredients
- 1 lb ground beef
- 1 cup yellow onion, diced
- 14 oz canned sliced carrots
- 14 oz canned green beans
- 1 cup fresh pepper, diced
- 1 cup fresh parsley, chopped
- 1 green onion, sliced
- 1 envelope of onion soup mix
- 1/2 tsp black pepper
- 8 cups of mashed potatoes
Instructions
- Cook the beef and onions in a skillet over medium heat until the beef is cooked through.
- Add the remaining ingredients except the mashed potatoes. Stir well and heat through. Taste for seasoning. Add more salt or spices as desired, refer to notes below.
- Choose your oven-safe baking dish. I am using four oven-safe glass containers that I will ultimately freeze for my Dad. I divided up the portions evenly among the four containers.
- Add the mashed potatoes and score the top with a fork.
- Since I am using glass, I placed my baking dishes on a baking sheet and put it in a cold oven, on the top rack. I heated the oven to 400F, then I turned on the broiler. I haven't shattered any glass using this method.
- Keep a close eye on the mashed potatoes, you just want the top to brown.
- Remove from oven when the top is browned. You can either serve immediately or cool down completely to freeze for later like I did.
Notes
- I used Anaheim peppers for this recipe because it has a little kick to it. You may use any fresh pepper you like. Bell pepper is more traditional but you can use any pepper you like.
- You can substitute fresh green beans or carrots in this recipe. If you want to use fresh carrots, dice them and add them with the onions in the beginning so they have enough time to cook. Fresh green beans can be added any time.
- If you want to amp up flavor, consider adding at least one of the following: soy sauce, mushrooms, Harissa, Worcestershire sauce, hot sauce, chile powder, cumin, garlic, curry powder, garam masala.
