A simple and easy rice recipe made with fresh ingredients. Simply make the rice as usual and toss with the fresh ingredients. Done!

I used the appliances I already have. If you don’t have a rice cooker, you can cook it on stovetop. If you don’t have a food processor, you can hand chop your cilantro and scallions and mince your garlic by hand. This recipe is easily adaptable. You can experiment with different herbs. Just remember to toss herbs in at the end for maximum freshness, color and taste.
If you really want to play with your food, add some spices in with the cooking rice. I like adobo seasoning with some olives like with Puerto Rican rice.

Simple & Easy Cilantro Lime Rice
Cilantro lime rice is simple to make with a food processor and a rice cooker. Simply make the rice first in the rice cooker then make a cilantro-lime paste with the processor. Mix and enjoy!
Ingredients
- 2 cups long grain white rice
- 3 cups of water
- 1 tsp salt
- 1 bunch of cilantro
- 4 scallions
- 2 cloves garlic
- 1/3 cup lime juice
Garnish
- 4 lime wedges
Instructions
- Place rice and water in rice cooker, cook according to your rice cookers directions. Mine is a single-button rice cooker. Some are programmable.
- Place the remaining ingredients in a food processor, process into a chunky paste.
- When rice is done, fold paste into rice.
- Serve with lime wedges.
Notes
- Folding the paste into the rice after cooking preserves the bright green color and fresh taste of the herbs.
- Serve with your favorite entree like tacos, Butter Chicken or Palak Paneer.
- To cook on stovetop instead of rice cooker, simply bring the rice and water to a simmer, cover and lower heat to low. Cook for 20 minutes, turn heat off. Leave cover on for another 5 minutes.
