A Columbian Empanada is a classic savory turnover – meat, potatoes and a fresh tomato stew known as sofrito is wrapped in a simple corn dough then deep fried. It is slightly crunchy on the outside and softly robust on the inside. Serve with your favorite taco garnishes.
