How to Make This Recipe
- Gather ingredients for the chicken marinade.
- Grate the garlic and chop the herbs.
- Mix the chicken with seasonings and olive oil in a large mixing bowl.
- Cook under a broiler until slightly charred and thoroughly cooked.
- While the chicken is broiling, add ingredients for Tzatziki sauce in a medium mixing bowl, chill in the fridge.
- Chop veggies.
- Assemble cooked chicken, sauce and veggies on a flatbread and serve.







Chicken Souvlaki Without Skewers
If you love the bright, zesty flavors of Greek chicken souvlaki but don’t want to deal with skewers or grilling, this easy recipe is for you. It delivers all the juicy, garlicky, lemony goodness of traditional souvlaki—made simply in a skillet, sheet pan, or air fryer. No special tools, no fuss, just tender chicken packed with Mediterranean flavor.
Ingredients
- 4 sprigs of thyme, peeled
- 4 cloves of garlic, minced
- 2 lemons, divided
- 1/2 tsp salt
- 1/2 cup extra virgin olive oil
- 1 lb of chicken thighs, skinless and boneless, cubed into bite-sized pieces
- 1 large tomato, diced
- 1/2 red onion, sliced or diced
- 6 pita
Instructions
- Place first 6 ingredients (Only the juice from half a lemon, save the rest for serving) in a medium mixing bowl, mix well, cover and put in fridge for thirty minutes or more minutes.
- While the chicken is marinating, make the Tzatziki sauce and place in the fridge also.
- Slice and dice your onion and tomato.
- Take chicken out of bowl and place on a sheet pan. If you have a wire rack for the sheet pan, use it but it isn't necessary. I used a broiler pan I thrifted from another oven.
- Broil chicken for 10-15 minutes, turning the chicken after 6 minutes. Keep a close eye on your chicken, there's a fine line between perfect and burnt.
- Serve on pita rounds, garnish with onion, tomato, tzatziki sauce and lemon juice.
Notes
- The chicken can be cooked in a skillet or air fryer.
