Easy Goulash With Spicy Sausage

This is a new series as I share the recipes I cook for my Dad. He is 84 years old and is no longer interested in cooking for himself. This recipe is one that he used to cook for us often. How to Make This Recipe

Basically, make macaroni and cheese according to package directions, add to cooked ground meat and onions, stir in canned vegetables of choice. Green beans and diced tomatoes were common in our house.

Easy Goulash with Spicy Sausage

Yield: 8 cups
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

A clever Mac & Cheese mash-up that I think my Dad invented. If you know of this recipe, please let me know. I would like to hear where it came from. He combined Mac & Cheese with ground beef and canned vegetables.

Ingredients

  • 1.25 lb spicy ground Italian sausage
  • 3 scallions, thinly sliced
  • 2 boxes of macaroni and cheese with cheese packet
  • 8 Tbs butter or margarine, sliced
  • 1 cup milk of choice
  • 14 oz. can of diced tomatoes
  • 14 oz can of green beans

  • Scallions, sliced
  • Fresh parsley, chopped
  • Grated cheddar
  • Sour cream
  • Paprika

Instructions

  1. Add spicy Italian sausage to large skillet or dutch oven. Cook on medium heat until browned. Add scallions.
  2. While sausage is cooking, bring 10 cups of water to a boil in a large pot. Add macaroni and salt if desired. Cook for 8 minutes, drain and add to skillet with the sausage. Add cheese packet, butter and milk. Stir until well combined. Add tomatoes and green beans, stir and serve.

Notes

  • I used spicy Italian sausage because that's what was in my Dad's freezer. He usually makes this with ground beef.
  • If you want to freeze this for meal prep, let cool completely before freezing in freezer-safe containers. This will cut down the ice crystals that form.
