If your lentil soup has dairy in it such as cream, yogurt etc, just know the dairy might ‘break’ where the dairy solids separate. It is still good but it might not look the same. One method is to reheat the soup stirring frequently and add fresh dairy at the end, stirred in until incorporated.
Is lentil soup healthy? – That depends what you put into your lentil soup. Generally speaking, lentil soup is very healthy. The starch in lentils are slowly digested making this an ideal food for diabetics. Among the legumes, lentils have the second highest level of protein per calorie, right behind soybeans. Lentils are also rich in vitamins and minerals.

Curried Lentil Soup With Ham & Chipotle
flavored with aromatics, curry powder and chipotle peppers in adobo sauce. It is super easy to make and freezes really well for future weeknight meals.
Ingredients
- 2 Tbs butter
- 1 1/2 cups white onion, diced
- 1 1/2 cups carrots, diced
- 1 pound ham, cubed into bite-sized pieces
- 1 Tbs garlic, minced
- 1 1/2 Tbs curry powder
- 5 cups broth, chicken or vegetable
- 2 cups water
- 1- 2 chipotle peppers in adobo sauce
- 1/2 lb green or brown lentils
- 2 bay leaves
- 3 sprigs fresh thyme
- 1 Tbs red wine vinegar
Garnish
- fresh herbs, scallions
- salt to taste
Instructions
- In a large dutch oven, melt butter over medium-high heat and add onions, carrots, ham. Stir well. Continue to cook until vegetables are soft, about 5 minutes.
- Add garlic and curry powder. Stir constantly to prevent burning. Cook for one minute.
- Add broth, water, chipotle, bay leaves, thyme sprigs and lentils. Stir and bring to a simmer. Cover, reduce heat and simmer for 45 minutes, stirring occasionally.
- Remove the bay leaves and thyme. Add vinegar and check for seasoning (see if you need to add salt).
- Serve with crusty bread and garnishes.
Notes
Make this vegetarian by omitting the ham and increasing the amount of carrots. Also cut the carrots larger. You can also add a little smoked paprika or an additional chipotle for smokiness.

I have been wanting to try lentil soup for a long time. This soup is fantastic! It was really easy to make and the flavor was amazing and on point.
