Why This Sardine Sandwich Actually Works (Even If You’re Skeptical)

Okay, I need to tell you about the time my husband refused to even look at this sandwich.

I’d just opened a tin of sardines on the counter, and he made that face. You know the one. But twenty minutes later he was asking if there were more sardines in the pantry, because this lemony, crispy, herby sandwich is that good.

Firstly, if you are skeptical at using canned fish, don’t be. Friend, it’s going to be OK.

I know it can be scary to open a tin of fish, especially if you haven’t before. It’s going to be OK. It’s not gross. Some people are squeamish about seeing bones (like me), but the beauty of canned sardines is that the beans are mashable, so you don’t have to look at them. With this recipe it is especially true because we are adding yogurt and avocado which leaves you with a creamy spread that hides all the things you might find weird.

This recipe is so easy, I think you might surprise yourself when you add this to the regular rotation of lunch or even dinners that are quick and easy. Canned fish, common ingredients, fresh aromatics and herbs, toast. That’s it, Let’s DO THIS!

What You’ll Need: Pantry Staples + Fresh Add-Ins

  • canned sardines
  • avocado
  • yogurt
  • cilantro or parsley
  • scallions
  • red onion or shallot
  • acid such as lemon juice or vinegar
  • salt & pepper
  • bread to toast

How to Make the Crispy Sardine Sandwich (Step-by-Step)

  • In a medium sized bowl mix the sardines with avocado, yogurt, s&p, half the red onions, half of the herbs and scallions, acid.
  • Toast your chosen bread, I found a beautiful Everything Bagel Seasoned Baguette and made this an open-faced sammy.
  • Shmear the sardine mixture on the toast.
  • Top with the remaining herbs, onions and scallions.
  • Enjoy knowing you made an addictive but healthy meal:)

Ingredients

  • 1 can of canned sardines
  • 3 Tbs of plain yogurt
  • 3 Tbs of avocado
  • salt & pepper to taste
  • 1/2 red onion, diced
  • 1/2 bunch of cilantro or parsley
  • 3 scallion stalks, sliced
  • 3 Tbs of lemon juice or vinegar (lemon, plain, white wine, red wine)
  • Bread of choice to toast (baguette, sourdough, rye, whole grain)

Instructions

  1. In a medium-sized bowl mix the sardines, avocado, yogurt, salt, pepper, half of the red onions, half of the herbs and scallions, acid. Mash all ingredients, especially the fish until you get the consistency that suits YOU.
  2. Toast your bread in a toaster.
  3. Shmear the mixture on your toast and top with the remaining herbs, red onions, scallions.
