Chicken Tinga Loaded Fries

It all started with one of my all-time go-to recipes for busy weeks.  Simply make this two-ingredient taco meat and serve it seven ways.  Top with your favorite garnishes and you are set.

This time I loaded some plain old frozen fries with the Chicken Tinga, guac, onions, cilantro and cotija cheese.  You could also make Chicken Tinga tacos, burritos and Chicken Tinga Salads.

Ingredients

  • your favorite frozen fries, cooked according to package directions
  • Chicken Tinga
  • guacamole
  • cilantro, chopped
  • scallions, chopped
  • cotija cheese

Instructions

After baking your fries, plate them out and top with the remaining ingredients.  If making the Chicken Tinga in advance, simply re-heat in the microwave before adding your toppings.

Notes

  • This is a super flexible recipe.  Have fun topping with your own garnishes.  I bet sour cream or kimchi would be fantastic.
  • Make a large batch of Chicken Tinga and make this all week.

Loaded fries are the best! That's like my Friday night jam. Definitely going to try this, I think i'm going to add some sour cream. This looks very interesting.

If I make these in a slow cooker and microwave, I could make these in the dorm. They look fantastic and I love how easy they are to make. Saving this, can't wait to try them.
