A refreshingly cool complement to any spicy entree. This 3 minute salad is a very simple version of a popular side dish. I serve this Thai salad with spicy chicken wings and Korean food which results in a harmonious international partnership of cuisine.
Mr. Craftiness and Miss B both really like this salad which makes it a unanimous winner in my house. It fits nicely into any diet and is incredibly easy and fast to whip up.

3 minute Thai Cucumber Salad

Ingredients
- 1 english or hothouse cucumber
- 1/2 cup white vinegar
- 1/2 cup white sugar
Optional Garnish:
- cilantro
- chopped peanuts
- red pepper flakes
Instructions
- Dissolve sugar in vinegar.
- Partially peel cucumber to make stripes and slice thin.
- Mix ingredients together, garnish if desired, enjoy!
