This is my favorite recipe from my Christmas mince series.  The bread is moist, apple-y and made extra special with the addition of traditional mincemeat.

I have made this bread in different variations by just substituting the fruit.  This was originally my go-to banana bread recipe where I just change out the fruit and nuts.  My freezer is full of apples and apricots so an apple bread was just going to happen.  The Christmas mince jumped in the mixing bowl because I have this jar of mince and my goal is to play with my food and see how many recipes I can make with this AMAZING invention, like these fun little cookies.

Do you have a favorite sweet bread recipe where you just change out the fruit?  This one is highly adaptable.

What to do with leftover quick breads?

This really freezes well.  If for some reason, we can’t eat this in 2 days, we will wrap in foil and then plastic wrap and store in the freezer.  The foil touching the food first helps to decrease the freezer burn and wrapping in plastic helps to keep the bread moist.

You can also wrap individual slices in the same manner and put in a toaster when you are ready to eat.  I find that the toaster will de-frost and heat frozen bread.  You can do this with those extra loaves of sandwich bread you toss in the freezer too.

How to serve quick bread

I like to slice the bread and serve to guests with optional butter on the side.  Make sure your butter is at room temperature so that your guests don’t tear apart your amazing bread.

Personally I prefer to eat this with hot tea.  My favorite tea is English or Irish breakfast tea.  I steep my tea bags in super hot water for less than 3 minutes.  Any longer and tannins will form in your tea leaving it bitter and puckerish.  Don’t do this to yourselves, quick, hot steeping is key and maybe add a smudge of sugar to counter the bitterness.  OK, maybe I’m a tea snob.

Serving with coffee is another popular option.  If you are going to serve your bread with coffee, just have all of the usual accompaniments to coffee out.  Sugar or alternative sweeter and milk or cream.  If you want to be extra fancy, half & half makes coffee extra special.

Hubby loves quick breads and this one is no different.  I should have made two, because this baby disappeared in no time.  Since this is December, this is now my go-to hostess gift since it is so easy AND delicious.

Speaking of hostess gifts, you may be doing a lot of get-together-ing this month.  Below are some creative ideas for hostess gifts that will make you popular in the Christmas party circuit.  Some are very creative (and maybe not for everyone).  What are your favorite go-to Christmas gifts?

Enjoy, be merry and eat good food!

Apple Quick Bread with Mince Recipe

Yield: 12
Prep Time: 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 10 minutes

An easy and simple apple quick bread with walnuts and Christmas mince. A great breakfast option and homemade hostess gift.

Ingredients

  • 1.5 cups of all purpose flour
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • pinch of salt
  • 1 egg
  • 1 cup of apples, peeled, cored, chopped
  • 1 cup of mince
  • 3/4 cup sugar
  • 1/4 cup vegetable oil, may substitute any light flavored oil or coconut oil
  • 1/2 cup of chopped walnuts

Instructions

  1. Preheat oven to 350F.
  2. Line the bottom of an 8x4x2 inch loaf pan with parchment paper, set aside.
  3. In a medium mixing bowl or the bowl of your countertop mixer, combine first 5 ingredients, gently whisk to combine.
  4. In another medium bowl, add in the remaining ingredients, mix together.
  5. Make a well in the dry ingredients bowl and pour in the wet ingredients.  Mix until well incorporated.  This can be done by hand pretty easily if you don't have a mixer.
  6. Pour into pan and bake 45-55 minutes.  The bread is done when it is a rich brown color and a toothpick or chopstick comes out clean when you poke it.
  7. Cool on a rack.

Notes

Pro Tips

  • You can change out the fruit and nuts to maker different varieties of quick breads.  You can also add extract to increase the flavor.  This is a great recipe to use up extra fruit.
  • If you wrap in plastic after it cools and wait one day to cut, it will not fall apart easily.  I can never wait that long so....

The mince combined with the apple quick bread is such a great idea. It really brought the bread to a whole new level. And because the bread is stuffed, it’s really filling. I’ve been enjoying it for breakfast with a bit of butter.

I love love love apple quick breads! Such a great flavor, but so much easier than a pie, and so perfect this time of year when there isn't a ton of fresh produce.

Mincemeat is so easy Anne and a great staple to have in the fridge. You can make any baking recipe into a mince recipe with little fuss. It stores a long time in the fridge:)
